Cardamom and Orange Greek Yogurt Panna Cotta with Raspberries and Crushed Pistachios . . INGREDIENTS 1 tbsp. unflavored gelatin 2 tbsp. cold water 1 cup heavy cream 1/3 cup sugar 1 tsp. orange zest 2 tsp. #vanilla extract Pinch ground #cardamom Pinch salt 2 cups #GreekYogurt 1 cup #raspberries 1/2 cup crushed #pistachios 1/2 cup #honey . . INSTRUCTIONS 1. In a small bowl, sprinkle gelatin over cold water. Let sit for 5 minutes or until gelatin becomes soft. 2. Bring cream, sugar and orange zest to a boil in a medium saucepan. Remove from heat; stir in vanilla, cardamom, salt and gelatin mixture. 3. Whisk yogurt into cream mixture. Pour into six, 1/2–cup ramekins or small glass or ceramic jars. Cover with plastic wrap and refrigerate for 3 hours or until firm. 4. To serve in ramekins, drizzle with honey, raspberries and pistachios. CRANBERRY WALNUT WEDGES #RaleysRecipe INGREDIENTS 1/2 cup plain lowfat #yogurt 3 tbsp. #honey 2 tbsp. vegetable oil 1/2 tsp. #vanilla extract 1/2 cup whole #wheat flour 1/2 cup all-purpose #flour 1 tsp. #baking powder 1/4 tsp. baking soda 1/8 tsp. salt 1/4 cup dried #cranberries 1/4 cup chopped #walnuts INSTRUCTIONS 1. Preheat oven to 400°F. Line small baking pan with parchment paper. 2. Whisk together yogurt, honey, oil and vanilla in medium bowl. Whisk together flours, baking powder, baking soda and salt in small bowl. Add flour mixture, cranberries and walnuts to yogurt mixture and stir just until moistened. 3. Shape dough into ball and transfer to prepared pan. Press into 6-inch circle. Cut into 6 wedges and separate wedges. 4. Bake 13–15 minutes, until tops are lightly browned. Serve warm or at room temperature.

Ingredients 1 Large rotisserie #chicken (in our Deli) 1 bunch #cilantro 4 cloves #garlic, smashed 2 (2- inch) pieces #ginger, cut into halves 1 Large #onion, quartered 1 #carrot, peeled and quartered 1 #jalapeño pepper, halved 4 quarts water 3 tsp. salt 1 lb. rice noodles, soaked and drained . . Toppers (optional): 1 lb. bean sprouts 2 cups fresh #basil leaves 2 jalapeño #peppers, thinly sliced 6 #lime wedges . . Directions Prep: 30 minutes, #Cook: 8 hours, 15 minutes (mostly unattended), Serves: 6 1. Remove meat, skin and bones from chicken. Set bones aside. Coarsely shred meat and set aside; discard skin. 2. Remove leaves from cilantro and set aside. 3. Place chicken bones, cilantro stems, garlic, ginger, onion, carrot and jalapeño in a slow cooker. Cover with water and cook on low heat for 8 hours. 4. Strain broth to remove bones and stems, then season with salt. Place #noodles into bowls, then ladle broth over top. #Beer Battered #Wings with #Apricot Ale Glaze Ingredients Sauce: 2 cups @pyramidbrew Apricot Ale 2/3 cup apricot preserves 1 tbsp. spicy brown #mustard Sea salt and cayenne pepper to taste Wings: 1 cup Pyramid Apricot #Ale 1¼ cups prepared baking mix (such as Bisquick) 1 tsp. seasoned salt 1 tsp. dried thyme 2½ lbs. party #wings Vegetable oil for frying Directions Prep: 15 minutes, #Cook: 20 minutes, Serves: 8 1. To prepare sauce, pour ale in a medium saucepan and cook over high heat for 10 minutes or until reduced by half. Add preserves, mustard and seasonings and cook for 5 minutes more or until mixture has thickened to a nice glaze. 2. To prepare wings, stir together ale, baking mix and seasonings in a medium bowl. Heat 2 to 3 inches of oil in large deep nonstick skillet. Pat wings very dry and dip each into batter, shaking off excess. Carefully place into hot oil and cook for 4 minutes on each side or until golden brown. Drain on paper towels. 3. Serve wings immediately with sauce or place on a platter and drizzle with sauce.
