2 onions peeled and chopped
250g Potatoes peeled and chopped
600ml chicken stock
Salt and Black pepper
Cook the onion in butter until soft but not browned.
Add the potatoes and stock and cook till the potatoes are soft.
Add the watercress and cook for 3 minutes.
Blend then season with the salt and pepper.
Enjoy with some crusty bread.
