This is what I made with the wagyu. Marinated, then seared and roasted for just 5 minutes. Served with a fennel, red cabbage, endive and pomegranate hash; beetroot carpaccio; mushrooms sautéed with sake, soy and butter: and topped with some broccoli sprouts and a homemade hoisin.
