eat_to_thriveSpring rolls this evening! Rice paper filled with baby kale, cilantro, zucchini, carrots, swiss chard stalks, & mango slices. Sauce made by blending one super sweet ataulfo mango, juice of 1/2 lime, 2 tbsp peanut butter, 2 tbsp coconut aminos (which is sort of like tamari or soy sauce), a couple scallions, and a pinch of chilli flakes.
