Lemon vanilla berry-filled protein muffins πŸ˜πŸ‹!!!!!!!! Aka muffins packed with a whole lotta AMAZINGNESS!!! Warm, packed with berries, hint of lemon β€οΈπŸ’›. So delicious!!!! As part of my #jointheresolution with @vitacost, I'm making something based off of all your suggestions: a creation without peanut butter 😱! Yep!!! Surprise πŸŽ‰, I CAN bake without peanut butter included, ha ha! πŸ‹ For the millionth time, this is a "dump in a bowl and stir" recipe! Dump in a bowl and stir: 2c almond flour, 2 scoops vanilla protein, 1t baking powder, 1/4c coconut sugar (I find this @vitacost), 2 eggs, 1/4c honey, 1T lemon juice, 1t vanilla, and about 1/4c unsweetened almond milk (or enough until it becomes "cake batter" consistency). πŸ‹ Then I stirred in about 1/2c frozen berries. Pour into muffin tins and fill 2/3 full. It made about 15 or so. Bake at 325F for about 25 min. Thennnnnnn DEVOUR. Don't share. No. Never share your treats πŸ˜‹.
