Jidori chicken ramen. Chicken frames, water, boil & skim. Add roasted chicken frames, onions, carrots, ginger, garlic, black pepper in a sachet. Reduce 1/3.  Remove veg, add konbu, cook out, remove. Add bonito flake, steep. Season with tare and salt. Served with rare breast, grilled tenders, collards, and a slow egg.
