Half of my family members request this eclair cake as their birthday dessert - which means it’s their favorite!

Just like eclairs, this cake includes a from-scratch choux pastry, luscious cream filling and homemade chocolate frosting. But it’s WAY easier to make because you don’t have to pipe, fill and frost individual pastries.

No. More. Flat. Cookies! 🍪🙌🏼

Does 1 cup of flour weigh 120 grams? This is the one question I get asked most often - and the answer makes a HUGE difference in your baking. 🧐

Sure, the accepted value of 1 cup of flour is 120 grams, but have you ever tested it? I have – over and over again and I can tell you the number of times I measured by volume (just with measuring cups like most people in the US do) and got that number – ZERO. 🚫

In our experiment you can see the amount of flour depended on so many factors and each person got a different value. This happens to you in your kitchen as well I promise. 👩🏼‍🍳

So – if you’re assuming 1 cup of flour weighs 120 grams and your cookies go flat – you need to use more flour! I find that a cup of flour weighs between 130 and 135 grams when I measure as carefully as I possibly can – either sift and level or fluff, scoop and level. And all my recipes are written with the ACTUAL metric system numbers I tested in my kitchen to ensure your success!

If you bake using the metric system but use recipes that were created using cups (measuring by volume not weight) – please keep this in mind as you make cookies, pies, cakes, etc. this holiday season! 🍪🥧🍰 🦃🎄
