And here we go! The Chinese New Year pizza is available via @tockhq !
As a kid, one of my favorite things that grandma would make was Chinese sausage. The balance of sweet and fast with each chew just really tasted amazing to me. She wasn't making it from scratch, as there's no place to really hang and wind cure Chinese sausage in the townhomes of Schaumburg without getting weird looks from neighbors. But she would take this simple piece of meat, and serve it in so many ways... Just simply sliced, pan fried, stir fried in rice, as a compliment in a Chinese broccoli dish, etc. I could never get enough, and she would always make sure to have some for me whenever I visited.
We introduced this as a weekend special on a woodfired pizza our first year we opened, along with an appetizer and a red bean ice cream sandwich between two house made almond cookies. Afterwards, I was pleasantly surprised how many people told me how much they enjoyed that pizza and asked for it to come back! So now it's a yearly thing!

Is that the same as lap cheong? I’ve made that here in Australia a couple times. It’s in one of my favourite noodle dishes kwey teow. We’ve been threatening to do a pizza with it. Might have to take the leap.

God I love this. My mom would make white rice and Chinese sausage when I was a kid but I haven’t been able to find it in the NW burbs. Happy New Year! 🧧🀄️🐲
