Forget the slice of soft, citrusy lemon sponge...check out the poinsettias in the background 😍 100% real, isn’t the colour just magnificent? ❤️🌺 I do have the cake recipe though for those who may not give two hoots about the plant 😂 Lemon’s not really a Christmassy flavour but I had such a craving for this so... Recipe below! LEMON SPONGE 🍋 2 cups self-raising flour 1/2 cup caster sugar 1 tsp baking powder Pinch of salt 3/4 cup dairy-free milk 1/2 tsp vanilla extract Zest from 2 lemons Juice from 2 lemons ICING 🧁 4 tbsp icing sugar Juice from 1/2 lemon MERHOD 🥣 Place all the sponge ingredients in a mixing bowl and gently combine to form a smooth batter. Place in a greased/lined 20cm cake tin. Bake at 180•c for 35-40 minutes. A skewer stuck in the middle should come out clean. Leave to cool completely then transfer to a large plate. Make the icing by mixing the icing sugar and lemon juice. Drizzle over the top of the cake. Enjoy! 🍋💚
