Today I had a day emotionally (who doesn’t these days!) so i needed comforting 🍅 #RoastedTomatoSoup w #calabrianchiles. I toasted some @tartinebakery bread with olive oil and @followyourheart parmesan cheese. 🍞 Bread can be the hug you can’t get in a pandemic, haha. When cooking for clients on an #antiinflammatory diet, we tend to stay away from #nightshades. That being said, when working with clients to have a well-rounded nutrition intake (aka eating the rainbow and variety), I do not shy away from tomatoes, etc. It’s not first on my list, but in season, it’s on the table. It’s amazing how simply healing HAPPY TASTE BUDS with organic, whole foods can be—Aka - not over-analyzing, no stress. Eat what’s in season, feel better. I always say GREENS FIRST (#microbiome, nutrient density). Then ORANGE veggies (beta carotene needed for so many functions). Then add the rainbow and get a lot of #cruciferous veggies. Tomatoes have C, potassium, folate, and K - an #antioxidant called #lypocene - which has benefits - such as sun protection, improved heart health and a lower risk of certain types of cancer.
