Last week I challenged myself (and lots of you joined in) to drink 8 glasses of water a day. For this week, I’m going to challenge myself to have a minimum of 4 servings of vegetables a day. The food guide says more but I am doing it in baby steps. Who wants to join in? It’s actually not as hard as you might think, one serving is only half a cup for most veggies and leafy greens like spinach are 1 cup a serving. So what about you?
