- hellolisalinthe best decision i made today was scheduling a massage.💆my next best decision was making a batch of my toasted coconut, bulgur + butternut squash bowl. it's a meal prepper's dream.
i keep cooked grains and roasted squash in my fridge so i can throw them together for a quick lunch or dinner. today, i threw together about 2 1/2 cups cooked bulgur, 1 1/2 cups roasted butternut squash, several tablespoons of toasted coconut, 2 large handfuls of spinach (that i wilted in a pan), and a small handful of pomegranate seeds. then, i whisked 3 tablespoons of soy sauce, 1 tablespoon of sesame oil and a pinch of salt. finally, i tossed everything together and, voila! super easy and tasty grain bowl.
