kdlblast night's deconstructed nachos: ground turkey mixed with peppers/jalapeño/rice/quinoa as the base, cheese, some crumbled corn chips, and a large helping of my mango salsa. when thinking of the weeks around my birthday, this was one of the meals i wanted to especially get to enjoy. and i have leftovers for lunch today and friday dinner. making it a form of self care too because those are meals i don't need to put extra effort into. #bdaymonth #kristineskitchen
