PB & J Breakfast Nests
They aren't all that pretty, but dang tasty and filling! They are also vegan which basically means you can eat the dough...
1/2 c. Honey
1/4 c. Ground Chia Seeds
1/2 c. Peanut Butter
1 c. Almond Pulp from freshly made almond milk
1/2 c. Gluten Free Oats
1 tsp. Vanilla Extract
Sprinkle of Sea Salt
Favorite jam, spread, or jelly
Mix the honey, vanilla, and chia in a small bowl.
In a larger bowl, combine almond pulp and oats until evenly mixed.
Add peanut butter and honey mixture and mix well.
Spoon into a greased muffin tin and make a depression in the middle for the jam.
Using a spoon, add your preserves.
Bake at 325 for 35 mins or until edges are golden.
LET COOL BEFORE TRANSFERRING OR SERVING!!!
