Lunch definitely stole the show this week. This salad was one of my faves. Baby spinach, roasted butternut squash, avocado, pine nuts, dried cranberries, pears and leftover baked salmon with a ginger sesame dressing. A piece of buttered sourdough toast on he side. (Always a good idea.)
