- livbydesignPrep tofu: squeeze out excess water with paper towels & cut tofu into cubes.
I baked the tofu in the oven for a bit first, just until light golden brown, then tossed them in blackening seasoning and then sautéed them in the skillet.
I usually have a really yummy blackening season that I got from NOLA but I was out, so I made my own.
2 tablespoons smoked paprika
1 tablespoon dried thyme
1 teaspoon ground cumin
1 teaspoon garlic powder
1/2 teaspoon cayenne
1 teaspoon black pepper
For the slaw, I just tossed purple and green cabbage in 1/4 c of Apple Cider Vin.
For the sauce, 1 Avocado, 1/4 can of coconut milk, 1 lime & cilantro - buzz it in a food processor until creamy.
Throw it all on a corn tortilla! Yummers!!
