Famed chef and Auguste Escoffier, born in Villeneuve-Loubet near Nice, added potatoes and green beans to the traditional Niçoise Salad recipe, an innovation that remains controversial as a "questionable idea" a century later.  We're not questioning it at all, we quite like the idea.
