  • thethingsthatieatI thought I would mention a little more about this pasta technique I tried out here. The gist is to cook the noodles in as little liquid as possible (chicken stock with a little tomato sauce, here), such that when the pasta is cooked, the liquid has reduced and combined with the starch from the pasta to create a silky and delicious sauce. I would say err on the side of using less liquid than you need and top up as necessary. Fresh pasta works better here, I think.
