Soooo here is what I made for the @britmums #dolmio #thankgoodness challenge... A veggie pasta bolognese type thing! And a baby version for Lily. I roasted aubergine, courgette, red pepper and onion. Then I cooked soya protein and mushrooms in the Dolmio sauce, added in the vegetables and served over pasta, with grated cheese on top. It was alright! The baby version was plain pasta with roasted red pepper and courgette. Lily seemed to like it!
