Had some left over zested limes from making my cake on Tuesday so I thought I'd have a go at making lime curd for the first time last night. Oh my word it's amazing! I used @nigellalawson recipe from Domestic Goddess and expected to have to tweak quantities or make it up with lemon juice as I only had 2.5 limes instead of 4. However my limes were super juicy so I could make a full amount. Surprisingly there were no empty jars in the kitchen so lime curd had to go in a covered bowl in the fridge. I don't think it will last long anyway, it's so delicious, especially on toasted rye bread for breakfast.
