You guys!! This week is actually trying to kill me. I woke up yesterday and was feeling like I had managed to get rid of my cold in just 3 days. Awesome, right? Then I go and throw out my back! 😫 I've never done this before and the pain was excruciating! To the point that I started hyperventilating and nearly passed out. My hubby called 911 because I couldn't breathe, couldn't see and could barely get words out. SO SCARY! I managed to get my breathing under control somehow and he got me into a position that didn't feel like knives in my back until the medics arrived. I'm so lucky he was home and that I wasn't holding the baby when it happened. Ugh! Is this week over yet?
Shrimp Ceviche
2 quarts water
1/4 cup kosher salt
1 lb raw shrimp, peeled and deveined
Juice of 2 lemons
Juice of 2 limes
Juice of 2 oranges
1 cup diced cucumber 
1/2 cup finely chopped red onion
2 Serrano chilis, seeded and finely chopped
1 cup diced, seeded tomato 
1 avocado, chopped into 1/2" pieces
1 Tbsp roughly chopped cilantro leaves 
1/4 cup extra virgin olive oil
1/4 tsp salt

1. Combine water and 1/4 cup salt in a large saucepan; bring to a boil over high heat. Add shrimp and immediately turn off the heat. Let the shrimp sit until just cooked through, about 3 minutes. Drain shrimp, transfer to a cutting board until cool enough to handle, about 10 minutes.
2. Chop the shrimp into 1/2" pieces and place in a medium non-reactive bowl. Add lemon, lime and orange juice. Stir in cucumber, onion and chilis. Refrigerate for 1 hour.
3. Stir tomato, avocado, chopped cilantro, oil and 1/4 tsp salt into shrimp mixture. Let stand at room temperature for 30 minutes before serving. Garnish with cilantro leaves and serve with tortilla chips.
