Recipe makes 6 protein candy eggs.
🍯Peanut butter protein filling:
¼ cup natural peanut butter (64g)
¼ cup vanilla pea (or pea blend) protein powder (25g) *see blog post for subbing whey
2 tablespoons filtered water (30ml)
🍫Chocolate coating
2 tablespoons raw coconut oil (28g), warmed to liquid
2 tablespoons raw cacao powder (11g)
1 packet stevia (1g)
(↑ or use your favorite dark chocolate)
🍯Topping (optional)
warmed peanut butter + coconut oil
warmed peanut butter + vanilla whey
Mix filling ingredients and form into egg-shaped mounds. Chill.
Mix coating ingredients and use a fork to dip the eggs. Lay on parchment and refrigerate to set.
Drizzle topping, if desired.
