Check out this recipe we made up for Sourdough Chestnut Flour Pancakes.  They are delicious and gluten free, and an an especially fun way to use chestnuts, which we gather by the bushel full in October.

2 c dried chestnuts or chestnut flour
.
2 c rolled oats
.
1 ½ c almond flour
.
½ c plain yogurt
.
2 c water
.
1 t salt
.
2 eggs
.
1 t baking powder
.
2T coconut oil or cooking spray
.
If dried chestnuts are whole, run through vitamix or grain mill to pulverize into flour. .
One, Two, or Three nights before you want to eat these fancy pancakes, combine chestnut flour, oats, almond flour, yogurt, water, and salt in large bowl.  Let sit at room temperature.

Just before you want to cook and eat these yummy things, add eggs and baking powder, and blend with an immersion blender, or put into your blender and blend, OR don’t blend, but mix instead and enjoy the texture of oats in your pancakes.

Cook on a well seasoned cast iron skillet or non-stick frying pan like you would any Pancake .
Enjoy with a healthy amount of butter and apple or maple syrup.
