modfarmThere are quite a few machines involved in #beantobar chocolate making, and if we had to choose a favorite, it would have to be our three roll mill. Our roll mill was built in 1939 and was previously used to refine ink. We repurposed it to refine the particles in our chocolate, which makes the chocolate silky, smooth, and delicious. In this photo, one of our chocolate makers, Victoria Canonico, mills a batch of Cabernet Sauvignon, a bar we make by steaming cacao beans over simmering wine! Victoria is the Queen of the Mill.
