For the cupcakes:
1 ¼ C cake flour
1T cocoa powder
½ tsp baking powder
½ tsp kosher salt
¼ C unsalted butter
¾ C granulated sugar
¼ C vegetable oil
1 large egg
½ C buttermilk
1 ½ tsp red food coloring
½ tsp vanilla extract
½ tsp baking soda
½ tsp white vinegar

For the frosting:
8oz cream cheese
¼ C unsalted butter
2C powdered sugar
½ tsp vanilla bean paste
Pinch of salt

Instructions:

Preheat oven to 350°F. Line a standard 12-cup cupcake pan.
Sift together the dry ingredients.
Beat together butter and sugar until light and fluffy. Stream in oil. Beat in egg.
Whisk together buttermilk, food coloring and vanilla.
Alternate adding dry and wet ingredients to butter mixture.
Stir together baking soda and vinegar, and fold into the batter.
Scoop batter into prepared cups
Bake 16-20 minutes.
Cool on wire rack.
Beat together cream cheese and butter.
Sift in sugar.
Stir in vanilla and salt.
Decorate and enjoy.
