#Dinner tonight: Pan-Fried Mahi Mahi seasoned with sea salt, black pepper, garlic and Cajun seasoning then topped with a sauce of minced fresh garlic, lime zest, lime juice, chopped fresh pineapple, cayenne pepper + salt & pepper briefly cooked in melted grassfed butter. 😋😍

On the side is roasted lemony red potatoes and purple sweet potatoes + balsamic roasted root veggies (red beet, golden beet, carrot, parsnip, radish & yellow onion - recipe #ontheblog ) that I fixed on two separate baking sheets.

The sauce was a spur of the moment thing and turned out really yummy with the Cajun seasoning. Next time I would add more pineapple and maybe a bit more lime, which I loved!
