Rather than not ordering because I didn't understand the protocol, I asked the hostess to walk me through the process, filling my bowl with noodles, vegetables, fermented fungi, raw beef, spicy chilies, and all manner of god knows what, and was rewarded with a new favorite dish. It was a reminder that trying new things is more important than trying to have all the answers.
