With the holiday season upon us and all those parties and delicious food in the very near horizon, I've been trying to fill my days with healthy and filling breakfasts and lunches. On days that get busy, I've been finding that preparing bigger amounts of food, earlier on in the week, is very helpful! This week for example, I cooked some Quinoa and roasted yams. I also sautéed some lean ground chicken in onions and spices. Each item was stored in its own container. Then when it was lunch time, a grabbed a little bit of each and warmed it up for a delicious meal. Now if, I can keep this up for the holiday season, I'll be in great shape!
