If you’re still trying to hunt down the perfect turkey recipe, I have one up in the archives for you that has brought me a table full of happy friends and family year after year. It’s a roast turkey with pears and sage, covered with a delicious mixture of pan drippings, stewed pears, rubbed sage, honey, white wine, and duck fat (you can use butter instead if you’d like, too!). There’s a recipe for pear and sage stuffing that goes along with it, as well as a pan dripping gravy recipe to boot! I recommend starting with brining the turkey today and making everything else tomorrow morning.
