My mom's apple pie recipe was based on the Fannie Farmer cookbook, and she swore by a combination of Granny Smiths and Winesaps, the latter of which is deeply, dark red. When I was in elementary school, she would go to the orchard by herself, and we would arrive home to find the boxes and bags of apples that she had picked by herself. It was no family outing - it was serious business! Or maybe that farm just wasn't open on the weekends...I wish I could ask her. We would make enormous bowls of hot apple sauce using a tabletop hand crank machine that she borrowed from a neighbor, and pie. She used to squeeze a lemon over the apples for the pie filling, though my copy of FF is absent that step. Mom lives on in the lemons.
