Hey guys, happy Friday from @realfoodwithdana! Letโ€™s talk about post-workout food baby, {letโ€™s talk about you and me} ๐ŸŽง When I finish a workout, whether it be crossfit, lifting, a swim workout...I am HUNGRY. I need something with staying power, a good combo of protein and carbs to re-fuel those muscles and keep me full, especially if itโ€™s a morning workout.
I came up with this funky combination after a long swim workout and was so ravenous I couldโ€™ve eaten the plate itself! This is what weird Whole30 cravings took me to....mustโ€™ve been a โ€œkill all the thingsโ€ day, haha!
And holy WOW, if you havenโ€™t tried out the combination of sweet potato and almond butter yet...prepare to have your taste buds blown. Try it and let me know what you think!
    Post-Workout Breakfast Plate
    Serves 1
    Cook: 10 mins
    โœจ ย Ingredients โœจ
    1 medium sweet potato
    1 egg
    1-2 slices bacon*
1 tsp (or up to 1 Tbsp) almond or sunflower butter*
*pictured, but optional - 1/2 tsp coconut oil on top of the sweet potato
    โœจ ย Directionsโœจ
    1. COOK the bacon in a small skillet over medium heat until crispy but not burned, about 5 minutes.
    2. MEANWHILE, NUKE that sweet potato in the microwave for about 5 minutes, until itโ€™s soft to the touch and cooked through. You could also use a leftover baked sweet potato!
    3. ONCE the bacon is done, remove it to a plate and fry your egg in the bacon fat. You can go sunny side or flip it over to do a fried egg!
    3. CUT open the sweet potato, and reserve ยฝ for later.
    4. ASSEMBLE your plate: top off your warm sweet potato with some almond butter, then off to the side, top off your bacon with your perfectly fried egg. DEVOUR. *make sure youโ€™re using compliant almond butter and bacon!
