Traditional Thai medicine uses a system of elements (earth, air, water, fire) and this appetiser contains each of the elements, to help you balance the elements within you. Scallions, roasted peanuts, toasted coconut, dried shrimp, limes, ginger and chilis. Fold your wild betel leaf into a little cup, fill with the ingredients you like, add a drizzle of lemongrass sauce and eat in one bite! Yum. So delicious. But SO much chopping (and toasting over coals) to prepare this snack - took us all morning! (We made a huge quantity. This is just the little bit we nibbled on as a reward!).
