Good morning! Do you remember the low-carb muffin recipe I shared last week? (It's a few posts back, if you're interested.) I love it so much I've been playing with the recipe and came up with what I think is my favorite variation: Low-Carb Spiced Walnut Muffins! It's waaaaay too early to be baking with pumpkin (so there's no pumpkin in these beauties), but I spotted pumpkin pie spice mix in my cabinet and thought it would be a great flavor pairing with walnuts and maple, which it is! Here's the #recipe:

Low-Carb Spiced Walnut Muffins (Yields 6 to 8 muffins) ⭐️3 large eggs
⭐️4 tablespoons water
⭐️4 tablespoons heavy cream (or use canned coconut milk for #paleo version)
⭐️2 tablespoons avocado oil
⭐️2 tablespoons pure maple syrup or honey (or omit and use an additional 2 tablespoons water + additional stevia)
⭐️1 1/2 teaspoons pure vanilla extract
⭐️3/4 cup almond flour ⭐️1/2 cup + 2 tablespoons golden flaxseed meal
⭐️2 teaspoons pumpkin pie spice mix
⭐️1 1/2 teaspoons baking powder
⭐️1/2 teaspoon granulated stevia
⭐️1/4 teaspoon salt
⭐️1/2 cup walnuts, coarsely chopped

1️⃣Preheat the oven to 375F and line a muffin tray with 8 paper liners (you will get 6 to 8 muffins out of this). 2️⃣Whisk together the eggs, water, cream, oil, maple syrup, and vanilla in a large bowl.

3️⃣Whisk together the almond flour, flaxseed meal, pumpkin pie spice mix, baking powder, stevia, and salt in a medium bowl.

4️⃣Whisk the dry ingredients into the wet and stir just to combine, and then let the batter sit for 3 minutes to thicken. Fold in the walnuts.

5️⃣Pour the batter into the prepared tray and bake until light golden on top and a wooden pick inserted inside comes out clean, about 20 to 30 minutes.

6️⃣Cool 10 minutes in the tray and then transfer to a wire rack to finish cooling.
