For many Middle Eastern Christians, Easter is celebrated this Sunday.
These special non-Paleo treats are prepared all week in celebration of Christ's death and resurrection. The shape represents Jesus' crown of thorns and the date filling represents the sponge. 
It is such an intricate handmade process using special "pinchers" to make the shape. Semolina and dates are the star ingredients to make these delicious Middle Eastern Crown Date Cookies or ka'ek bel 'ajwe.
I made these with my aunt last year when I visited home during Easter.
