    1 whole egg
    1/8 teaspoon dry mustard
    1/8 teaspoon salt
    1 cup avocado oil or light olive oil (do not use anything but a light tasting oil!)
    1 tablespoon fresh squeezed lemon juice

    In a food processor turned on high (or you can whisk by hand!) mix egg, dry mustard, and salt for 1 minute at least until the color lightens up and mixture starts to foam on top. Verrrrry slowly drip about 1/4 of oil into mixture with motor running the entire time. It will start to thicken slowly. Then with more of a steady small stream continue to add the rest of oil. When all done add lemon juice and turn motor off. Store in an airtight container for 5-7 days.
    Makes a little over 1 cup.
