sarahbearcraftsWhole 30, Day 1, dinner: baked sweet potato loaded with taco meat (with a generous portion of kale mixed in), avocado, and sweet mini peppers!
Heat 2tbs of cooking fat in a large pan. When oil is hot, add one small, chopped onion. While onion is cooking, chop 4 cloves garlic and measure the following spices:
1 tsp each of cumin, coriander, oregano and chipotle
2 tbsp chili powder (I used Centrella brand, which has salt--if you're using one without, add salt to taste)
When onion is golden, add garlic. Stir for 30 seconds and add 1 lb ground beef.
Stir the meat until brown, then add 1 8 oz can tomato paste and 1/2 cup chicken stock. Stir to combine, lower heat, then stem and chop 5 leaves kale. Add to mixture and it's done!
Spoon over some baked sweet potatoes!
