sarahbearcraftsI made some chipotle-lime mayo with rosemary!
Combine 1 egg (room temperature--plan ahead!), 1/4 cup olive oil, 1/2 tsp each of mustard, salt, and rosemary, and 1 heaping tsp chipotle powder in a food processor on high.
Measure 1 cup avocado oil, and with the processor running, drizzle it in slowly. Turn it off.
Juice one lime, and pour it into the mix with the processor on low. Turn it off and transfer mayo to a glass jar.
