So tired in the best way after today, craving nutrients galore in this HUGE salad bowl. Roasted beets, romaine lettuce, shredded carrots, mushrooms, radishes, lentils, avocado (DUH), quinoa, pomegranate seeds all topped with a simple olive oil, lemon, and raw apple cider vinaigrette. Oh yes. 💁💃🏼🦄
