![[Pt. 2] Here is my low-prep Pumpkin Spice Cortado recipe, created through trial and error 👩🏻🔬 For my original motivations, see my previous post!
Most of my experimentation revolved around how to distribute the flavor without over-strengthening it or blending anything so that I could still pour (crappy) latte art. As such, this is more of a process than a recipe. In your cup, add:
• 𝟭 𝘁𝘀𝗽 𝗱𝗮𝘁𝗲 𝘀𝘆𝗿𝘂𝗽 (less sweet than other syrups, and the date flavor is subtle but I think goes really well with the other flavors here!)
• 𝟭 𝘁𝘀𝗽 𝘄𝗮𝘁𝗲𝗿
• 𝟭/𝟰 𝘁𝘀𝗽 𝗼𝗳 𝘆𝗼𝘂𝗿 𝗳𝗮𝘃𝗼𝗿𝗶𝘁𝗲 𝗽𝘂𝗺𝗽𝗸𝗶𝗻 𝘀𝗽𝗶𝗰𝗲 𝗯𝗹𝗲𝗻𝗱 (mine was 1 part ground cloves, 2 parts ground nutmeg, 3 parts ground cinnamon, infused in a tiny jar with some slices of ginger because we only have fresh ginger in this Asian household 😜)
Stir gently with a skewer. At this point, the syrup is not going to completely mix with the water yet.
🔑 Key to success: Tilt and rotate your cup so that the spices lightly coat the inside of your cup, as close to the top as you dare. If you skip this step, you will just have sad spice dregs at the bottom of your cup 😔
Prep your espresso as usual, but BEFORE YOU PULL YOUR SHOT, microwave your cup for 5 secs or less to melt the syrup just enough to fully mix it with the water. (Be very careful; at 7 secs in my weak microwave, it starts to bubble and congeal.) Don't swirl the cup because the mixture is now more watery than before and it will wipe off your spices coating.
Pull a slightly shortened shot over your mixture to compensate for the liquid that's already in the cup, e.g. if I normally do 18g in, 36g out, I might stop it at 30g. Steam your milk and pour your cortado! 🤗 (You can easily do a latte instead, but the flavor might be more diluted.)
A small amount of syrup may settle to the bottom, so occasionally stirring as you get closer to the end is encouraged 👌
I feel like I can hardly call this a recipe because it's so basic, and I have no expectations of anyone actually trying this haha, but this perfectly filled a niche hole in my heart so I wanted to share 😋
