The pasta isnt just al dente but the 'quality' of the Al dente is chewy, thick, just so good. 8min cooking. The quality of ingredients really make all the difference. the colour from the egg yolk, the sharpness & richness of the pecorino and the crunchy, full flavoured guanciale, and we also think the cloudy pasta water adds to the dish.
