Chicken may be more than the "white meat" alternative to "red meat." Not only have chickens changed in their size and flesh composition, they are consumed almost indiscriminately. . . When one looks at the rise over the last century in food consumption, chicken and cheese stand out from all others. While refined sugar, which everyone seems to agree is consumed too much, has doubled, annual chicken consumption has increased 6-fold from 10 pounds per person to 60 pounds per person. Turkey (the larger white meat?) has increased 10-fold to 10 pounds per person. Together, this doppelgänger of "healthy" choice is piled high on sandwiches, stuffed into nuggets, and topped over salads - all simply to deliver a sauce (boiled chicken isn't that appetizing..."tastes like chicken"). . . While everyone is focused on its saturated fat and cholesterol, which are very similar to that of red meat, it's actually the methionine - an essential amino acid (protein building block that must be acquired through diet) that slips onto the bread or fork unnoticed. It turns out many cancers cells, for example breast and prostate, have what is called "absolute methionine dependency." These cancers are also rising with similar rates and maybe sugar is taking more than its fair share of the blame. If one puts healthy prostate or breast tissue cells in a petri dish and deprives them of methionine they make do and survive whereas the cancerous cells die immediately. . . Are we certain this is the cause of the increases in breast and prostate cancer? No, but it's certainly a plausible cause. . .
