My top three tips for a great frittata: 1. Have all the additions pre-cooked; 2. Beat the eggs until just combined, careful not to add too much air as you don't want it to puff up when cooking because then it will collapse when it starts to cool and the texture will be off; 3. Keep moving the eggs, pulling from the edges towards the middle until the eggs begin to firm up and dragging the spatula meets too much resistance. Then turn the heat to low and let a crust form on the bottom before finishing it off under the broiler to brown the top.
